Dr. Ayushi Kapoor is a food scientist and postdoctoral researcher at the Center for Dairy Research, University of Wisconsin–Madison. Her research focuses on developing sustainable food processing technologies and finding innovative ways to improve food quality while reducing waste. As Wisconsin is known as America’s Dairyland, her work supports the state’s dairy industry while contributing to innovations that benefit the U.S. dairy sector as a whole. She enjoys making food science accessible to diverse audiences and sharing how scientific discoveries influence the foods we eat and contribute to a more sustainable future.
